Raisin Bun
This sweet dough recipe is actually one part of the ‘Mexican Bun’ recipe from Mamafami Fotopages. Here is my raisin bun. Sorry for the bad picture. The first batch of buns was out of the oven quite late, about 9.30 p.m and my camera was on low batt. Manage to get 2 snapshots, in a hurry, before it poof-off.

Sweet dough
500 g high-protein flour, sifted (I used plain flour)
5 g / 1tsp bread improver
5 g / 1 tsp bread softener
20 g powdered milk, sifted
75 g caster sugar
6 g / 1 tsp salt
8 g / 2 tsp instant yeast
2 eggs, lightly beaten
270 g water or milk(do not use milk powder if using milk)
60 g butter, softened
1 cup black raisins
Method:
- Mix sifted flour, bread improver, bread softener, milk powder, castor sugar and salt in electric mixer with dough hook on low speed for one minute. Add in dry yeast, and continue mixing.
- In another bowl, combine egg and water/milk.
- Pour ¾ of the liquid, a little at a time, into the flour.
- Increase speed to medium and mix for about 8 minutes, then add in butter. Continue mixing till a soft, smooth and elastic dough forms.
- Remove dough from mixer and shape into a ball.
- Divide the dough into 55 g portions(should get 17 portions). Roll each portion into a ball.
- Cover the balls of dough and leave to rest for 10 minute.
- Pat into shape and place on a greased baking tray.
- Repeat with remaining portions of dough.
- Place each bun about 7.5 cm apart on the baking trays.
- Prove for 45 min in a warm place.
- Bake in preheated oven at 200 deg C for 12 to 15 min or until buns are lightly brown.
Note:
I added the raisins after taking the dough out of the mixer. The raisins did not spread out evenly. I should have added the raisins into the flour before adding the liquid.
I did not use any egg wash. Instead, I sprinkled some water on the buns just before baking. When the buns are out of the oven, brush with melted butter. (mamafami’s tip)
Saya gunakan tepung biasa. Korek-korek dalam almari, rupanya bread improver-ku dah expired. Tak boleh pakai. Cari lagi, jumpa emplex (Rasanya, nilah bread softener). Ni aje yang ada. Bolehlah.. Saya bahagikan ia menjadi size 50g balls dan dapat 20 biji.
